Spinach Dip
Spinach dip was another one that we used to love back in the day…It was at the center of Daniel’s heart when he was a wee lad and we were dating. Naturally I wanted a space in his heart too, so in order to relive that childhood memory we used to share together once upon a time, I created this recipe.
This is also a great dish to take to gatherings because people will dig it so hard!
It can be served warm or cold. It would also make a great topping on this Best Burger Patty or served on a baguette.
Spinach Dip
Servings: about 4-6
Time to make: 15 minutes + soak time
Sauce:
1 cup cashews, soaked a couple hours -or- 1 cup almond slivers soaked a couple hours
1 tbsp. distilled white vinegar or apple cider vinegar
1 tsp. salt
2 tsp. onion powder
1/4 cup olive oil
1/4 cup water
Place all of the above ingredients in a blender and puree until smooth.
Add the following ingredients into a large bowl with the sauce:
3-4 cloves garlic, minced
3 cups fresh spinach, chopped
Let cool in the fridge and serve with crackers, bread, naan, or other veggie sticks.
