Mushroom bacon, to us, is one of the best discoveries in a vegan diet since nutritional yeast. Mushrooms are packed full of B vitamins and strengthening antioxidants that give the body the energy and repair it needs. The best part about mushroom bacon is that it doesn’t loose it’s nutritional value when heated! Like most plants, heat deteriorates many of the beneficial nutritional qualities, but mushrooms are bosses and can take it.

Mmmmmacon is a wonderful addition to sandwiches, burgers, pizza, or as a main “meaty” entree along side some mashed potatoes and baked beans. Yes, I like comfort food haha.
Servings: 2
Time to make: about 35 minutes
In a medium bowl, combine:
4 medium Portobello mushrooms, sliced 1/4 inch thick
3 tbsp. olive oil
1 tbsp. smoked paprika
1 1/2 tsp. garlic powder
1 1/2 tsp. onion powder
3 tbsp. Bragg’s Liquid Aminos
Stir to coat mushrooms evenly.
Bake on an un-greased baking sheet at 350 degrees F for 15 minutes.
Flip.
Bake for an additional 15 minutes.
